Day One Doings and Disasters

We were originally planning to start tomorrow but realized that would have us finishing the day we travel to NC... didn't think that was a smart idea.. it would be next to impossible to follow the rules there... so we started a day earlier. It kindof threw things off because it was unplanned. (I was also "upset" because I had meant to indulge myself with sweet tea the day before and now I missed out on my last hurrah sweet tea day. )  Anyway, John and I had to go to the hospital to see his Grandmother and by the time we were done, it was late and I was starving. We drove past a Fresh Market (we didn't know was there) so decided to poke our heads in. I had a mini breakdown.

I had barely eaten and all sorts of thought were going through my head...

"This is so stupid. We can't starve ourselves just to do a challenge"

"Common sense has to show up sometime"

"I'm starving and surrounded by food but because of silly rules I'm not actually allowed to eat!"

I felt .. heavy... this was going to be too much....

"I'm going to have to COOK every night.. even when its late!"

 I was sooo hungry and temptation to eat one of their deli sandwiches was so extreme I almost gave in and quit it for the day. John would have let me too and was even encouraging it "We can start all over tomorrow."

"That is NOT what I need to hear!"    Men!

So after I calmed myself down I picked up 2 large split breasts from a local farm.. we drove home and I cooked and I'm proud to say... we made it through day 1!

After supper, I spent the night cleaning and rearranging our pantry shelves. All of the NONO items are on the top shelf for the other people in our house to use.

Breakfast

Honey Whole Wheat toast with butter and fruit preserves
Bananas 

I enjoyed the 4th of a piece of toast that I had but I left it out while doing something with Aivry and when I came back a fly had found it. I never had the time to make more.

Lunch

Homemade Oatmeal with raisins, bananas and maple syrup:  Well... it was edible and not horrific but NOT super yummy. Real oatmeal is very.... oaty. LOL  So, none of us overate. I only chose oatmeal because I really couldn't figure out anything else to fix.



Snack

Larabars: Can I say HAPPILY SURPRISED!  YUM! Publix has them for $1. We're going to be filling the snack basket full of them. (although the calorie count is CRAZY... I know we're not supposed to be looking at calories but still)

Dinner

Smothered chicken with sweet potatoes:   A HIT!  I had read various recipes on stuff people do to make this and then made up my own. So far I've done this with everything. Not once have I followed an actual recipe. Really... its working out. Once you see basic groupings of food then you know... "yeah that should be OK together"  AnyWAY... I sauteed butter, olive oil, spinach, mushrooms, sharp cheddar cheese and parmesan cheese together while the FRESH chicken was cooking in the oven. I only put some basic seasonings on the chicken. After the topping was done.. I spread everything onto the chicken and baked for a bit longer. Oh Gosh... so delicious!
