We are officially VEGAN.
We eat....
NO SOY
NO HIGH FRUCTOSE CORN SYRUP
NO DAIRY
NO MEATS OF ANY KIND
NO EGGS
NO PROCESSED SUGARED TREATS
NO RED DYE
NO FROZEN MEALS
and
LESS GRAINS
Of course, we only turned vegan August 1st... 23 days ago.

I just read back through my older posts and couldn't help but laugh at the one where I'm marveling at eating spinach leaves! Spinach is a staple in this house now. After much research and after doing an elimination diet and realizing that we have a lot of issues with dairy, we decided we'd try out vegan for a month. Within 10 days John was in the kitchen making delicious meals, we outfitted our kitchen with staples and we decided to permanently stay vegan because the benefits were obvious and immediate... especially when my gall bladder attacks stopped.
Is it hard?
No, not at all really.
We pack lunches, we order vegetables at restaurants or bring our own. I find myself saying "we're vegan" without a thought. At most, the smell of other food sometimes draws me in but then I just think about the stomach pain I'd have and I'm good.
Plus, its a "popular" lifestyle right now so its much easier to live this way.

Yes
Except we're discussing possibly adding local eggs back into our diet.
and we're going Gluten free
and our next experiment is to eliminate WHEAT for a month to see if we see a difference.
Of course, that one is a little harder for us as many no-soy vegan dishes contain it.
It might take us awhile.
